Classic Pancakes with Blueberry Sauce

Still on the Challenge. Yay! It’s possible I cheated a bit because I was at a wedding on Saturday and ate tons of delicious things. Amazing.
Meet something we eat at least once a week: Classic Pancakes with Blueberry Sauce.
The kids love pancakes. I love pancakes. Reinman loves pancakes. Win, win, win.
And I really love to make my own sauces. Sometimes I make raspberry. Sometimes strawberry. This time it was blueberry. So delicious.
I feel like I don’t have to say much about this recipe. The pictures say it all. You can’t go wrong with homemade pancakes and homemade sauce.
Classic Pancakes with Blueberry Sauce
pancake recipe adapted from my Betty Crocker Cookbook, and blueberry sauce recipe from 10o Days of Real Food
Ingredients:
for the pancakes:
- 1 egg
- 1/2 cup whole wheat flour
- 1/2 cup all-purpose flour
- 3/4 cup milk
- 2 T olive oil (or I sometimes use coconut oil)
- 3 tsps baking powder
- 1/2 tsp cinnamon
- 1/4 tsp salt
for the blueberry sauce:
- 3/4 cup frozen blueberries (or raspberries, strawberries, or whatever you prefer)
- 1 T maple syrup (more if you want it sweeter)
- 1/4 cup water)
Directions:
- Let’s make the blueberry sauce first. Put all your sauce ingredients in a small saucepan. Heat over medium-low heat, and bring to a low boil. Cook until berries have softened, about 5-10 minutes. Remove from heat, and puree with a blender.
- For the pancakes: Beat egg in a medium bowl with a hand beater. Add in the rest of the ingredients, and beat until smooth.
- Heat griddle or skillet over medium high heat or to 375 degrees. Grease griddle with butter or non-stick spray.
- Pour about 1/4 cup of batter onto hot griddle. Cook pancakes until top is bubbly, and puffed around the edges. Turn and cook the other side until golden brown. Repeat with the rest of the batter. (We have a griddle where I can cook at least 6 pancakes at a time! Love it!)
- Enjoy immediately!
