Our Favorite Sandwich: Sweet Chili Turkey Panini

We love this sandwich. As the post heading says, it’s our favorite.

There’s not much to this sandwich. Bread. Cheese. Turkey. And the key to the whole wonderful thing: Sweet Chili Sauce. If you haven’t had Sweet Chili Sauce before, you need to try it ASAP. It’s sweet and tangy at the same time. If gives the sandwich a bit of a bite. You will love it!

This is a really basic recipe, if you want to even call it a “recipe.” You can use whatever cheese you want. I usually have blocks of sharp cheddar in my fridge, so that’s what is used most often. Sometimes we use ham, but we seem to like the turkey better. I usually use softened butter or olive oil on the outside of the bread to give it that nice crunch when putting it on the panini press. Oh, and if you don’t have a panini press, you can easily make this by using a skillet, putting your sandwich on there and then using something heavy (like another, smaller skillet or a big lid) to press the sandwich down.

Sweet Chili Turkey Panini

Ingredients:

  • Whole Wheat (or white) French or Italian bread, cut into thick slices
  • Turkey (or ham, chicken…)
  • Cheddar Cheese (Or something else, like brie.. mmm…)
  • Sweet Chili Sauce
  • Butter or Olive Oil
  • Seasonings. I like to use McCormick Italian Herb Seasoning, but I know there are seasonings out there specifically for the panini.

Directions:

  1. Preheat the panini press.
  2. Butter or oil your sliced bread. Sprinkle seasonings on the buttered bread.
  3. When panini press is heated, put one slice of bread buttered side down on press. Pour a little Sweet Chili Sauce on and then layer with cheese and meat. Top with a slice of buttered bread and cook until browned.
  4. Enjoy!

Turkey Pesto Sliders

We had a pretty uneventful weekend, except that I lost my voice. The kids were pretty excited about this, seeing as how I could hardly talk, let alone raise my voice. Thankfully, today I feel 100%! Watch out kids! ;)

I’ve got a great and easy recipe for you all: Turkey Pesto Sliders. I found this recipe at Annie’s Eats, and knew I had to make them right away.

Everyone loved these little guys, including the Baby. I think Reinman ate half the pan. No joke. Okay, maybe only 4. Hehe.

Turkey Pesto Sliders

recipe slightly adapted from Annie’s Eats

Ingredients:

  • 12 slider buns
  • 12 slices of turkey deli meat (I ended up using 24 slices of turkey slices because I bought thinly sliced turkey. Use what you think is appropriate)
  • 12 slices of provolone cheese (I only used 6 slices because my cheese was thick. Funny– thick cheese and thin turkey.)
  • 6 T pesto
  • 6 T mayo
  • 4 T butter, melted

Directions:

  1. Preheat oven to 400 degrees. Line a baking sheet with parchment paper.
  2. Split the slider buns, and put on baking sheet. Put a slice or two of turkey on the bottom half of each bun. Then layer with a slice of provolone cheese.
  3. Mix your pesto and mayo together. Put a thin layer of pesto mayo on the inner side of the top half of each bun. Brush the tops of the buns lightly with the melted butter. Bake 10 minutes or until cheese is melted, and sandwiches are heated through.
  4. Enjoy! (I know we did.) :)
